French pancakes (Crèpes) recipe.

Today is Shrove Tuesday, and in the UK, it is pancake day. Yum.
Pancakes might be yummy but I think the French version (crèpes) are even yummier.

Here is a simple recipe that is almost impossible to mess up.

You will need:
  • 250g of flour.
  • 500ml of Milk
  • 2 eggs
  • A bit of ground cinnamon
  • Vanilla extract
  • A bit of grated lime rind
  • The finest brown rum you can get your hands on. I would recommend rum from Martinique, but then again, I am biased. 
Simply mix the eggs and the flour into a thick paste, then add the milk very very slowly till you end up with a smooth paste (there should not be lumps). Add the cinamon and vanilla and lime, and then some rum to your heart's content. I then add a little bit (2 table spoons) of sunflower oil to the mixture. And voila the mixture is ready to go.

Use about half a ladle to pour the crèpe mixture on a non stick frying pan. It works better if your pan is very flat. You would need about 2 minutes per side, till nice and not too brown.

Serve with whatever you like (brown sugar, cinamon, etc.....)
